Position Summary: The Head Cook; manages the kitchen, leads and train the kitchen staff to meet the California Health Department and San Diego County Food Safety guidelines, prepares meals as outlined by the menu and checks portion control; cooks, bakes, and serves a variety of foods including entrees, baked goods, salads, vegetables and meats; assists in distribution of meals to satellites, sets up food counters with prepared foods; stores food and does necessary cleanup; responsible for ordering, checking deliveries, and inventory of food and supplies.Essential Functions of the Job:* Prepares delicious, attractive, nutritious meals to approximately 150 to 200 seniors three days a week.* Knowledge and ability to prepare meals to meet health standards and California Department of Aging standards. Assist in monthly menu preparation.* Must have Food Handler's card and be knowledgeable in health and sanitation issue related to kitchen work.* Have the ability to train and supervise others in these areas.* Have a working knowledge of nutrition, portion control, food cost control, and working within a budget.* Assume the responsibility associated with any expanded duties that may be delegated by supervisor. (Inventory and food orders)* Participates in morning huddles with kitchen staff to direct the work assignment for the daily menu.* Ability to relate to the public regardless of ethnic, religion and economic status.* Promotes and believes in Mountain Health's mission statement 'Improve the health and well-being of the whole person by providing access to quality care and community services.'* Attends all staff meetings, department/site specific meetings and any other internal and/or external meetings as directed by supervisor.* Assists in the maintenance of all department areas and ensure compliance with the department directives and policies as well as Mountain Health's policies and procedures relative to infection control, exposure control and safety issues.* Participates in Mountain Health's Continuous Quality Improvement program to ensure and improve quality.* Perform all other duties as assigned.* Participates in Mountain Health's events and community events such as health fairs, etc. as delegated by direct supervisor. Health fairs and events may include before and after normal working hours.* Reads memos, directives, meeting minutes, and revised policies and procedures as posted.* Participates in the Injury and Illness Prevention Program and follows guidelines that promote workplace safety.* Demonstrates adequate care and responsibility for equipment. Reports and/or repairs missing or damaged equipment and supplies.** Familiar with and understands Mountain Health's Personnel Policy manual and follows all established personnel policies.* Follows administrative chain of command.Additional Duties and Responsibilities:* Maintain current knowledge of policies and procedures as they relate to safe work practices.* Follow all safety procedures and report unsafe conditions.Use appropriate body mechanics to ensure an injury free environment. Be familiar with location of nearest fire extinguisher and emergency exits. Follow all infection control procedures including blood-borne pathogen protocols and Mountain Health's injury and illness prevention program. Follow all Health Department and San Diego County Food Safety guidelines.
